Ingredients:
- 1/4 cup Peach Puree
- 1/4 cup Dried Apricots (diced)
- 2 tbsp Agave Nectar
- 1/4 cup White Balsamic Vinegar
- 1 tsp Garlic Powder
- 1/4 cup Cucumber (seedless) (peeled, diced)
- 1/4 cup Yellow Bell Peppers (diced)
- 3 tbsp Goat cheese (crumbled)
- 1 tsp Sea Salt
- 1 tsp Black Pepper
Instructions:
- In a food processor or handheld blender, combine the peach puree, cucumber, yellow bell pepper, apricots, white balsamic vinegar, agave, garlic powder and goat cheese.
- Blend until smooth. Seasoned with salt and pepper to taste.
- Cover and refrigerate for at least 4-8 hours before serving.
