Eh Puy lentils are tiny, and dark bluish-green in colour. Prized for its small size and low starch content that results in a firm texture when cooked. Requires no pre-soaking, cooks to tender in 20-25 minutes, and has a nutty, earthy flavour with hints of spice. Lentil du Puy is a common garnish for traditional French dishes including Confit of Duck, Goose, or Pork. Great in hearty meat stews or game dishes.
COOKING INSTRUCTIONS: Rinse 1 cup of lentils. In a pot, add the lentils and 2 1/2 cups of water and bring it to a boil. Reduce heat to a simmer, cover and cook until tender. Approximately 20 - 25 minutes. Drain before use.
