Ingredients:
- 1 cup Orzo pasta
- 4 tbsp Sorghum Syrup
- 1 tbsp Dijon Mustard
- 2 tbsp Red Wine Vinegar
- 2/3 cup Olive Oil
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Sugar
- 1 cup Strawberries (quartered)
- 1 tbsp Feta cheese (crumbled)
- 2 tbsp Pistachios (shelled)
- 2 tbsp Red Onion (chopped)
- 1/2 cup Arugula
Instructions:
- Make the vinaigrette. Combine, sorghup syrup, olive oil, red wine vinegar, dijon mustard, sugar, salt and pepper in a mixing bowl and whisk to combine. Set aside
- In a pot of boiling water, cook orzo for 8 minutes or until al dente. Drain and let it cool.
- In a large mixing bowl, add the orzo pasta, sorghum vinaigrette, pistachios, red onion and arugula. Toss until combined.
- Garnish with feta cheese and enjoy!
