L'arôme du Cubèbe (Poivre à Queue) rappelle le Tout-Épices. Ses grains ressemblent au poivre noir, mais leur tige y est attachée. Ils ressemblent à de petites punaises ou à des clous. Leur saveur est piquante, âcre, légèrement amère et persistante, souvent décrite comme un croisement entre le Tout-Épices et le poivre. Il est utilisé en cuisine marocaine et se retrouve souvent dans le mélange aromatique Ras El Hanout, utilisé dans les marinades pour la viande et le poisson.
