Un émulsifiant et stabilisateur naturel, sans gluten, utilisé comme épaississant. La gomme de guar est traitée à partir de la plante de guar et ne contient aucun autre ingrédient. La gomme de guar est une fine poudre blanc cassé fabriquée à partir de graines de guar moulues. C'est un épaississant alimentaire économique car seule une petite quantité est nécessaire, contrairement aux épaississants comme la fécule de maïs. Elle empêche la formation de cristaux de glace, est stable au gel-dégel et confère à la crème glacée une texture lisse et crémeuse en bouche. En pâtisserie, elle empêche les garnitures aux fruits de couler et peut remplacer la farine de blé dans le pain sans gluten.
