Ingredients:
- 3 lbs Chicken wings (patted dry)
- 2 tbsp Baking Powder
- 2 tbsp Grape seed Oil
- 2 tbsp Kimchi Powder
- 2 tbsp Turbinado Sugar
- 1 tbsp Miso
- 1 tbsp Fish Sauce
- 6 tbsp Lime juice
- 1/2 cup Water
- 1/2 tsp Salt
- 1/2 tsp Ground Pepper
Instructions:
- Preheat oven to 425°. Line a baking sheet with parchment or foil, drizzle with grape seed oil and set aside.
- To create the glaze, combine 1 tbsp kimchi powder, sugar, miso, fish sauce and water in a saucepan on medium heat and mix. Simmer until glaze thickens. Remove from heat, add lime juice, stir and set aside.
- In a large bowl, combine salt, pepper, 1 tbsp kimchi powder and baking powder.
- Add in the chicken wings into the seasoning mixture, tossing to evenly coat.
- Arrange the wings on the prepared baking rack and bake for 15 minutes. Glaze the wings with the kimchi miso glaze and bake for another 15 minutes. Turn the wings and repeat glazing and cook for another 15 minutes or until wings are fully cooked.
- Serve and garnish with lime wedges.
